Cor limey!

Our lime tree is back in fruit, after a bumper crop last year. We made lime marmalade, a lime cake, lime cordial and tried unsuccessfully to make salted limes.

What to do with this season’s crop? All suggestions welcome.

    Looks good Niall you could give them to yr friends and colleagues… but seriously ages ago I asked Colleen Shearer (then with Daily News, precursor to google I guess) for advice with lemons (and limes are on that continuum). She recommended either preserving them with wax (sounded like a trad method but too much work for a kid), or making juice and then ice cubes and we were very pleased and used these in salads, cooldrinks, cakes and cooked food until the next harvest.
